Tomato and Zucchini Skillet

From time to time, we will offer healthy nutritious recipes that will help you and your family to eat more vegetables and fruits.  This time of year, tomatoes and zucchini are in plentiful supply.  If you don’t grow your own tomatoes, or  have a neighbor that shares their tomatoes with you, we would be honored for you to purchase our tomatoes.  Look for them in the produce aisle.  Ask for them by name! We would appreciate it (and so would our tomatoes!!).

 

 

Tomato and Zucchini Skillet

2 Tbsp. Butter

2 sm. zucchini, sliced thin (1/4″ or so)zucchini

1 medium onion, sliced thin

2 medium tomatoes (any variety) sliced thin

1/2 tsp. garlic salt

1/4 tsp. basil leaves (dried)

Pepper to taste

1 c. mozzarella cheese

 

Put skillet on medium heat.  Add butter to skillet.  When melted, add zucchini and onions.  Saute until tender (onions will typically turn clear when tender).  Add tomatoes and seasonings.  Cover and cook until the tomatoes are tender (approx. 3 to 5 minutes). Remove from stove. Sprinkle with Mozzarella Cheese.  Variation:  add seasoned croutons or butter cracker crumbs for topping.  Allow cheese to melt before serving.
